Culinary Students Create Cool Desserts at Pierre’s Ice Cream Challenge

TriC Contest WinnersThe future of Cleveland’s culinary arts community showed what can be done with a little bit of ice cream and a lot of imagination in the finals round of the Pierre’s Ice Cream Challenge, held at the Cuyahoga Community College Hospitality Management Center at Public Square on April 28.

Under the direction of Chef Maureen Leonard, Tri-C Culinary Arts students were invited to create an original dessert or drink recipe using any Pierre’s Ice Cream frozen treat or flavor of their choice. The object of the competition was to create a unique, but simple dessert that could be recreated at home. The initial field was narrowed to five finalists.

The finalists presented their desserts for critique by a panel of esteemed judges, including Tri-C Campus President, Dr. J. Michael Thomson; Pierre’s President and CEO, Shelley Roth; Zack Bruell Restaurants Pastry Chef, Mia Amidi; and Scene Magazine Dining Editor and Q-104 Food Guy, Jason Beudert.

Pierre’s Mardi Gras King Cake Recipe

Try our cool take on a staple Mardi Gras dessert to celebrate Low Fat Tuesday with your family.

The classic Louisiana-style King Cake recipe calls for a bread-like dough stuffed with a nut filling and topped with white icing and colored sugar. For our better‐for‐you Pierre’s Ice Cream King Cake, choose one or more flavors of Smooth Churned Light Ice Cream, Slender® No Sugar Added Reduced Fat Ice Cream or Yovation® Probiotic Frozen Yogurt.

For a taste that’s similar to a traditional King Cake, try using the Vanilla or Butter Pecan version of any of those varieties – or get creative and go for something different, like Waffle Cone Sundae. Better, yet, add all three flavors into the mix!

Ingredients:

  • Pierre’s Smooth Churned Light Ice Cream or Slender® No Sugar Added Reduced Fat Ice Cream or Pierre’s Yovation Probiotic Frozen Yogurt (your favorite flavors)
  • Dried fruit, nuts

First, remove the ice cream from the freezer and let soften for about 5‐10 minutes at room temperature. Don’t thaw for too long, or the ice cream will crystallize when refrozen. Coat the inside of a Bundt cake pan or mold with non‐stick cooking spray, or line with plastic wrap. Scoop the ice cream into the pan. If you are using more than one ice cream flavor, add a layer of each until the pan is full. Place the pan in the freezer 30‐60 minutes to harden.

Remove the pan from the freezer. Set upside down on a serving dish for a few minutes … long enough so the cake slides out easily. You can also use a knife or rubber spatula around the edges. You can “frost” the cake with nonfat or light whipped topping, slice as is or decorate with chopped nuts and dried fruit.

Just for fun: In traditional King Cake, the most famous ingredient is a small plastic figure of a baby. The person who gets the slice with the baby in it is said to receive good luck … although some say it means that the person will have to make a King Cake for next year’s Mardi Gras party! If you choose to go all out, place the baby figurine – available at most craft stores – somewhere among the layers of ice cream.

Pierre’s Sherbet … Perfect for any Punchbowl

Sherbet is a delicious treat on its own, or creatively topped with fresh fruit. One of the most favorite ways to enjoy sherbet is as the centerpiece of your gathering … the festive bowl of party punch. Raspberry Sherbet

For a fun idea, try this delicious recipe for Santa’s Punch!

Ingredients:

  • 1 Quart Pineapple Juice
  • 1 Pkg. (2 qt.) Lime Kool-Aid
  • 1 Quart Pierre’s Lime Sherbet
OR 2 Pints ¡Hola Fruta! Margarita Sherbet
  • 2 Quarts Ginger Ale

Mix Kool-Aid in punch bowl per package instructions. Add pineapple juice. Just before serving, add Pierre’s Lime Sherbet one scoop at a time. Add Ginger Ale, and enjoy!

For red punch … use Raspberry Kool-Aid and 1 Quart Pierre’s Raspberry Sherbet OR 2 Pints Pierre’s ¡Hola Fruta! Raspberry Sherbet.

What is Sherbet?

Sherbet is similar to ice cream; however, it contains just a small amount of dairy, allowing for bold, rich flavors. Most sherbet consists of 1-2% butterfat, much less than ice cream, making sherbet a lower fat, lower cholesterol, lower calhola-fruta-mangoorie dessert than regular ice cream.

Sherbet is perfect for drink recipes! Pierre’s ¡Hola Fruta! Pure Fruit Sherbet and Pierre’s Pure Fruit Sherbet are both made with real fruit and fruit purees and come in a variety of unique and delicious flavors. Whether your favorite recipe calls for all the flavors of the Rainbow, or a more daring twist like Pomegranate & Blueberry or Piña Colada, Pierre’s has a flavor just for you.

Pierre’s Pure Fruit Sherbet Flavors:

  • Cherry Lemon
  • Lime
  • Orange
  • Pineapple
  • Rainbow (Lime, Orange, Lemon)
  • Raspberry
