Three-Ingredient Ice Cream Pumpkin Pie Recipe

It is an annual celebration where we take stock of life’s blessings, make memories with friends and family and … of course … delight in many delicious and flavorful foods. From Uncle Jim’s spicy buffalo wing appetizers to grandma’s famous sweet potatoes, your Thanksgiving menu is filled with as much tradition as the holiday itself.

One of our favorite holiday traditions is Pierre’s famous Pumpkin Ice Cream Pie. So easy to prepare, just three ingredients, it’s a great recipe if you’re looking to include a simple-to-make extra dessert or if your pumpkin pies never quite turn out as mom’s always did. Best yet, it’s an easy recipe for children who want to contribute with a recipe of their own. It’s just as delicious as homemade pumpkin pie and could possibly open a spot in the oven for an extra dish of Aunt Hazel’s green been casserole!

Ingredients:

  • 1 – store-bought or prepared graham cracker pie crust
  • 1 – 1.5 qt. container of Pierre’s Premium Pumpkin Pie Ice Cream
  • 1 – tub non-fat whipped topping
  • Optional: Ground cinnamon, nutmeg or pumpkin pie spice

Remove ice cream from freezer; let sit for five-ten minutes to soften. Scoop ice cream into crust, flattening and spreading each scoop until the pie shell is full. Cover with foil and freeze until it’s time for dessert. Remove pie from freezer; cover with whipped topping. Sprinkle cinnamon or other spice on top before slicing and serving.

Easy, right? And tasty, too. Let’s face it: A slice of refreshing ice cream pie is the perfect treat after working in a hot kitchen all day.

Just for fun: Add some crunch with crushed graham crackers or ginger snaps! Or, drizzle sundae caramel sauce on top of each slice before serving.
